Holy Italian Meatloaf Batman!!!!!

We just witnessed a true miracle tonight ...Lil one ate two helpings of her meat tonight and really wanted thirds.Ok ...That like NEVER happens with her and meat.She may eat a little triple cheeseburger from McDonalds once in a blue moon but as far as meat at supper time ...No way....I am definately keeping this as one of our meals now..lol I wanted to try a meat loaf recipe that I seen on the back of a stuffing box last time we had it ,so I got the stuff tonight and made this wonderful Italian meatloaf...Guppy and I both really liked it but lil one went nuts over it ..lol It was funny to see, actually.I also made mixed veggies( sweet white corn,broccoli,carrots and the cute little baby corn on the cob thingies).She cleared her whole plate totally clean and then requested more meat instead of veggies...That child AlWAYS wants more veggies...So I know a recipe has to be a darn good one for her to go that crazy over it.I will take some to work tomorrow to test it out on my co-workers..lol

I decided to go ahead and post the recipe just incase any of you wanted to try this miracle meatloaf..lol It is super duper easy and you can just pop it in the oven, set the timer,go surf some blogs and ,viola ...all done ...


Italian Style Meat Loaves:

Prep:10 minutes (if even) Bake time 30 minutes ( give or take )

2lbs. ground beef ( we use super duper extra lean)
1pkg.(6oz) Stove Top stuffing Mix Italian Style with Roasted Garlic
1/2 Cup water
2 eggs slightly beaten
1 jar (14oz)spaghetti sauce,divided ( just get your favorite spaghetti sauce and use 1 cup in meat loaf and 3/4 cup on top of all the loaves)


1. Mix all ingredients except 3/4 cup of the spaghetti sauce.

2.Shape meat mixture into 4 oval loaves in foil-lined shallow baking pan;top with remaining 3/4 cup spaghetti sauce.

3.Bake at 400 degrees for 30 minutes or until centers are no longer pink.Cut into slices to serve.


We were thinking tonight that some kind of pasta side would have went great with this ...I will have to play around and experiment with it some ..I always end up altering things and cooking different sides until I find the best combo ...

  4. Aside from chicken nuggets and turkey lunch meat i can not get Mira to even lok at meat. Tessa will eat the same plus any sort of turkey sausage or beef hotdog. i dont worry to much about it sionce we're not big meat eaters. now if only they would eat veggies things would be Aok around here. In my house is melted cheese on a tortilla like 5 nights a week with a side of what ever mom and dad are eating
